Malanser white wine soup

A unique soup
Ingredients for 4 servings:

1/4 power or meat soup
1/8 white wine
3 egg yolks
100ml cream

1 pinch nutmeg
1 pinch of cinnamon powder and salt

2 slices of bread
40g butter
½ teaspoon ground cinnamon

- Debark toast and cut into cubes
- Melt butter toast and brown the diced roast
- Sprinkle with cinnamon, immediately take out of the pan and put away

Give strength or meat soup and white wine in a saucepan with the cream
Egg yolk and also add to the soup. Then heat the soup controlled and frothy with a whisk the egg yolks without curdling.
(the soup should never boil). Once the soup to a creamy frothy
Consistency is pitched, season with nutmeg, cinnamon and salt.

In a soup plate, fill the foam evenly split, the cinnamon in small cubes
give the soup and serve immediately.


Beat the soup in a hot (90 degrees) water frothy, moreover also possible with champagne
